I can't use soy or lecithin in my bread, as my daughters are allergic to it, but I do have a white bread recipe that I make that is delicious that users 1tablet of Vitamin C, and it keeps the bread fresh for a week.
Not that this is any recommendation, but my VERY particular and critical 8 year old grandson will only eat this white bread. And it has to be white bread. I've made other white breads, and he won't even touch them.
