Linda, we like using a (clean) shower cap to cover our rising loaves because it keeps the moisture in but provides some space for the dough to rise without coming in contact with the plastic. You can buy bowl covers ("shower-caps") intended for this purpose on our website. You can also try putting a light coating of non-stick spray onto the dough so that the plastic doesn't stick to the rising dough. Be sure you aren't letting your dough rise for too long, as over-proofing is also often a culprit of bread that has collapsed.
