Hello John and Linda - We recommend making this recipe as written so you begin with a baseline. Next try introducing the WWW in placed of some of the flour while following the same technique. Next, try using a preferment such as a sponge as you suggest. This can be especially helpful when using whole grains. This added time will help to soften the bran for a better rise. If you are intent on using a sponge shorten the resting time for the sponge to an hour or two. Then add the other ingredients and follow the rise times as suggested in the recipe. Elisabeth@KAF
