Hi Carolyn, I dissolve powdered lecithin in the warm water then smash any lumps with m y fingers. I found a recipe for bread that stays so soft and fresh for 2-21/2 weeks at tammysrecipes.com/homemade_wheat_bread. I have also used lecithin capsules from the health food store(think is a fish oil capsule) with a capsule you put one cup flour in a bowl,slit open the capsule using the flour to absorb the l lecithin . Throw away the hard outer capsule. One capsule per loaf of bread or 1tsp. Powdered lecithin per loaf. Add one vitamin c capsule for a two loaf recipe by opening the vitamin c capsule and shaking the powder into the liquid. Add a pinch of ginger and two or three Tblsp. Vital wheat gluten per loaf of bread. Use 3-4 Tblsp. Honey for two loaves. Amazing!
