Love all your tips and hints. However, I am visiting my daughter in Southern India (Chennai) and brought her some bread I made at home. She loves it and wants more. The only flour I find here is very fine, called maida. I started a loaf with my current recipe and it is just so firm. Any tips for working with this kind of flour?? Thank you!!
