Carolyn: Our Italian flour is a finely ground, lower protein flour. It will make you a very crispy, cracker-style pizza crust, a lovely tender biscuit, and excellent breadsticks. The dough will be soft, and won't be as stretchy as you may be used to with our all-purpose flour. Hope this helps. Susan
