Matthew,
KAF's chocolate wafers are a mix, not ready made. However, if you want to make something like those wafers from scratch, you could start with a very basic cookie recipe, adding chocolate, of course, and see what develops! I've come up with some of my best recipes by making 'mistakes'. Once you start thinking about the chemistry of baking and how ingredients and methods affect outcome, often you find your instincts become quite keen. I'm thinking of a sugar cookie recipe, with perhaps fewer eggs, addition of dark chocolate powder and some melted bittersweet chocolate. I'd also stick with just one leavening agent, so say the recipe calls for 1 t of baking soda and 2 t baking powder, cut it down to 1 1/2 t of baking powder. And so on. It's amazing what you come up with along the way!
