I have taken unbaked loaves of bread after they rise the first time in loaf form. Punch them down and put them in a Vacuum sealer bag. Once all the air is out and its sealed I freeze the loaf. I can then pull the loaf out of the freezer and thaw in the refrigerator without it rising. Once it is thawed I take it out and put it in a pan to rise again. They have come out wonderful.
