Thanks for the tip on leaving newly baked breads undisturbed for a few minutes. I've been guilty of jumping the gun with the sad results you mentioned.
As far as storage, we freeze our homemade breads in slices (wrapped two at a time in waxed paper) in Tupperware style containers. We freeze our rolls and biscuits unwrapped in large ziplock bags. When we're ready to eat, I place two slices in the microwave next to a half cup of water in a pyrex dish, then zap for 25 seconds for bread slices, and 45 seconds for dinner rolls. We've done this for years and love it.
