I always slice and freeze my bread as soon as it's cooled. Then I turn the toaster up to 4 or 5 and toast it right from frozen. You're right, no one will know it's not fresh baked. Also, when I thaw a whole loaf I take it out of the plastic bag and leave it on a board or the crust will be softened.
