I have discovered a way for keeping baked goods fresh for 'indefinite' lengths of time. I use this primarily for cake layers but it also works for bread. After everything is cool I wrap the item in the sealable plastic wrap. Then freeze the item until it is solid. At that point I put the frozen item into a vacuum seal bag and using the gentle setting, I vacuum seal the item. I've kept individual cake layers and loaves of bread vacuum sealed and frozen for at least 6 months with no apparent quality degradation. Having cake layers on hand let's me whip up a fancy dessert when I have unexpected dinner guests.
