Hi PJ, I always thought you were supposed to immediately turn out the bread, so I've learned something new. I currently have 2 loaves of Paddy's Clonmel Kitchen Double Crusty Bread in the oven for the first time, so I'll try leaving it for a minute.
When I freeze bread, I slice the whole loaf and put it on a sheet pan with little bowls holding the end. When the slices are frozen, I separate them (if they're stuck) and then bag the whole loaf. It works for us.
