Hey P.J. As a wannabe bread-maker, this stuff is wonderful for me. Up until now, all the bread I've made has been in a bread machine (which sadly died a week ago), but I received a stand mixer for Christmas, with a dough hook, so my options are looking up now. I got to ask though, is a dough hook a proper substitute or kneading? Especially with something like Brioche? Also, I have a small request. I'm looking for a recipe for a type of chocolate wafer cookie. Real thin, like those kind you se in the supermarket near the "gourmet" baking goods, or near the ice-cream (that's where I see them). I have an idea in mind for a type of really luxuriant home-made candy bar, but I want to use something like this wafer as a base. Have you seen a recipe for anything like this?
