To substitute cocoa powder for 1 ounce of semi-sweet chocolate (which is comparable to dark chocolate chips), you can use 3 tablespoons of cocoa powder and 1 tablespoon of vegetable shortening, oil, or butter plus 3 tablespoons of sugar. If you're trying to use unsweetened chocolate in place of dark chocolate in your recipe, you'll need to experiment with adding additional sugar. Start with using 2 tablespoons of added sugar per ounce of chocolate and adjust to taste. Good luck and happy baking! Kye@KAF
