A great post, PJ! My sister-in-law gave me a reproduction copy of the Boston Cooking School Cookbook a few years ago. Although excited to try out the recipes, I was stumped about how much yeast was in a "yeast cake" or what temperature constituted a "warm oven." So I called up KAF's Baker's Hotline and had a solution in no time. This post reminded me that it's time to pull that book back out.
