Hi Kira, at almost 75% hydration this dough should actually be quite wet and sticky to begin with, so I wonder if it's possible you made an error when measuring the flour or the water? I know from experience that it is possible to make mistakes, even when using a scale. One way to double check your work if you feel a dough just doesn't seem the right consistency is to place a new bowl on the scale, tare the weight of the bowl, and then transfer the dough to the bowl. The total weight of the ingredients in the recipe should give you the total weight of the dough after mixing. While not a perfect fix, if you notice your dough is stiff and the weight is low, that would be a good indication that you need to add more water. Alternatively, if the dough is stiff and weighs more than it should, that might mean you accidentally added too much flour. Although a little trickier to remedy, you might be able to figure how much extra flour was added, and then increase the other ingredients by the same percentage.
Alternatively, if you covered the rising dough with a towel, this could have allowed too much airflow and dried out the dough over the 24-hour rise. For best results, we always recommend covering rising dough well with plastic wrap or a lid.
