I am a seasoned baker & followed these instructions perfectly, even weighing instead of measuring. Despite that, this dough was tough & near impossible to work with. Even after resting for 24 hours it was dry enough that I added water to it & let it rise longer. It didn’t seem to make a difference. Any suggestions or thoughts on what went wrong?
