We're glad to hear that this recipe is well-loved in your kitchen too, Denise! You sure can add some discard starter to this dough, check out our Adding sourdough to a recipe blog article for details on how to adjust a recipe to include discard. You're welcome to try making the dough naturally leavened, but it'll take some experimenting! You'll want to follow the steps in the article for adding starter to a dough but you'll just ripe starter instead. We hope this helps and happy baking!
