Hi! I tried this recipe today. It rose really well overnight, was probably at its full volume in less than 12h. But it didn't quite rise so well the second time. I left it puff a bit over one hour and it barely increased its size. After baking, flavor was nice but crust was quite sense. It is possible that it overfermented? How could I avoid this next time?
