Hi Heather! It sounds like there may have been too much flour added, which is very common as flour packs itself down in measuring cups. That's why we encourage measuring ingredients by weight which is always consistent. A little more water may have helped, but the amount of yeast we've found works just fine since it rests for so long. If it had a lot of yeast it would rise very quickly then collapse and not develop that lovely deep flavor a long, slow rise gives. Annabelle@KAF
