Hi there, Dorothy! Even after your dough has been in the fridge for a few days, you'll still want to take it out, shape it, and give the dough a bit of time to rise again at room temperature. The dough will rise slowly in the fridge but it will then need some time at a warmer temperature to warm up and the folding helps to create a bit of additional structure as well.
