Hi Darcie. Your yeast may be on the tired end, or there could be too much flour for the dough to be nice and hydrated, allowing it to rise. To check your yeast, put a teaspoon of yeast in a bowl of 1/2 cup lukewarm (about 90°F) water and a pinch of sugar. If it hasn't bubbled in 10 minutes, the yeast has died. If the yeast is fine and the flour is making it difficult to rise, we recommend measuring by weight if possible. For ideal measurement accuracy when not using a scale, we recommend fluffing the flour with a whisk or spoon, sprinkling it into the measuring cup, and scraping off the excess.
