The recipe suggests a minimum rise of 24 hours and a maximum of 6 days. This dough is not meant to be mixed in a blender but by hand. It should be quite sticky! The kneading should be a series of folds as the blog illustrates. This formula and its method will yield a bubbly crust. Your instinct to add more liquid was on the right track!
