HI Jean, The dough will pretty much take care of itself in the fridge, so no need to worry about punching down. For the water temp, it should feel comfortably warm to your finger. If it feels good to you for the temperature of the house, the weather, etc. it will feel good to the yeast, too. ~ MJ
