Hi there! Thanks for the note - love that you're dipping your toes in the GF water :) I personally haven't tried freezing this dough, but I'd say it would be best to do it after you bake it for the first time. I'd par-bake for the initial 15 mins and then wrap it up and stick it in the freezer. This serves about one 12" pizza so enough for at least 3 - 4 people. Hope that helps!
