Hi Jackie, this should work fine, but you'll still want to flatten the cookies before baking, which may be a bit tricky without the sugar to prevent the dough from sticking to the glass; a little flour may help out here. We'd also recommend test baking a few cookies this way to see if you like the changes you've made.
