I just made these in regular and mini size. I used the 6oz. of coffee trying to not get any grounds in the soak, since it will not dissolve. Since I made some of the cupcakes without liquor, I replaced the Amaretto in the frosting with 1 Tbsp of Almond extract so I could frost all of the cupcakes without having to make 2 separate batches. I also couldn't find the clear jel, but once I added the marscapone the frosting thinkened up nicely and held in the fridge for a day. They don't taste like the real thing, but they are fun to make!
