Hi HL, it's certainly possible to make an almond brittle with honey, but we're not sure how well substituting honey into this particular recipe will work. For best results, we'd recommend finding an almond brittle recipe that already contains honey. While we don't have one on our website, I was able to find several elsewhere online.
