Someone correct me if I am wrong, but when you add the nuts to the mix before it sets up — as one of my stovetop Gooseberry Patch recipes also calls for — the nuts aren't roasted as much as they are boiled. It's a viable shortcut but I think the candy pros probably would frown on it as it would decrease, rather than increase, how crunchy the nuts (and brittle) is.
