Hi there Sherine! You certainly could add in some pretzel chunks. Ganache could definitely be used to top the brittle if you're going to be serving them soon after but if you'll need to store the brittle for a few days we'd suggest drizzling just before serving as the ganache would require refrigeration but the fridge would make the brittle itself loose its crunch.
