I have never been a peanut brittle kinda person..... but WOW, have I changed my mind!! This recipe is the BEST. However, I did change the peanuts out for pecans & cashews, makes such a difference to me! I receive many compliments on this brittle. I have sent many batches to Germany where my daughter and her family are now and they and their friends love it. Matter of fact, I have been asked to send more! I can’t say enough about this recipe, and to make in a microwave, even better! I use parchment paper on a warm cookie sheet & it works GREAT. I even put it in the freezer to cool off if I’m in a hurry, works great too. Thanks Mrs B and Julia. Btw, like you suggested, you definitely need to measure everything out first and speed is the key!! Not difficult at all!
