Carol, it may not have been a problem with the heating but rather your baking powder. Test your leavener for freshness, which is key to getting the bubbly, airy texture. If your baking powder is still good, then try watching more closely next time during the heating process. The mixture should be bubbling quite vigorously and turned a deep, golden caramel color (like what is pictured here) when it's ready, and then quickly add the baking powder. This should help give you a better consistency with future batches. Kye@KAF
