My brittle came out perfectly. I've never made candy before but I bake. I was fastidious in my measurements and timing. I used half sorghum, half corn syrup and the flavor was brilliant. The texture is crisp, even in areas where the brittle is quite thick; no lock-jaw here. I soaked and roasted my own nuts (peanuts and pecans) and this really showcased my efforts with them.
