What a fabulous, and easy recipe. This was my first attempt at peanut brittle, and was so successful, and tasty, that I made a second batch right away. I used parchment paper, lightly sprayed with cooking spray, and it worked well. My biggest challenge was the incredibly hot Corning ware bowl was hard to hold onto while pouring out the mixture. If you have a bowl with a handle, I'd recommend using it. I made one amateur mistake of using my finger to get some of the peanut brittle off the spoon. What a burn that gave me! I'll be making this again and again for quick easy gifts.
