Don't worry! This recipe doesn't foam once it hits the pan. As you can see in the photo I took right before pouring it out of the bowl, it looks creamy and fluffy, but not bubbly. If your brittle isn't bubbling in the bowl, make sure your baking soda is fresh. If it IS bubbling when you add the vanilla and baking soda, just quickly stir everything to combine, and pour out onto your pan - it won't keep bubbling, but the air is there. Also: Make sure to keep an eye on the mixture after adding the peanuts - microwave temps vary, so you may not need to cook it for the full 4 minutes (pull it out when it turns to that nice caramel color.)
