I make peanut brittle and sell it at work around the holidays, I use the stove top method... same recipe... I do mine by smell and look as a candy thermometer always messed me up... my only question is... how do you keep the stuff hard?? Mine always gets sticky, soft and dark... I left some out in a plastic container in the garage over winter and it meltedd into a dark dark mass of sugar and peanuts...
