The secret to this recipe is to figure out the specific cooking time for your microwave. The first batch I made I followed the recipe exactly and cooked the sugar / corn syrup for 5 mins, then cooked another 4 mins after adding the peanuts and butter. The result was peanut brittle with the perfect texture but it had a slightly burnt flavor. We still ate it up!  When I made the next batch I reduced the first cook to 3.5 mins and the second cook to 2 mins. The result was a wonderful flavor but the candy stuck to our teeth pretty bad…again… we ate it up anyway!  On the 3rd try I left the first cook at 3.5 mins but added a minute back to the second cook; so 3 minutes. That was a home run! Perfect texture and great flavor! Made a few more batches like that and they all came out perfect. Anyway, great recipe…just be prepared to make a couple of batches, learn from those as you eat them up, and make some adjustments until you find the perfect customized cook times for your microwave.
