Thomas, I make this recipe frequently and never have an issue with it getting soft. I suspect it has to do with climate - I admit, I only make it in the winter, when it's cool and dry. If yours is softening, it's probably due to humidity - do you keep it tightly sealed in a glass jar? And, are you sure you're cooking the syrup/nuts to a high enough temperature? Too low a temperature (too little time cooking) and your brittle will be soft/bendable, rather than snapping crisp. Hope this helps - PJH
