Made this easily and quickly yesterday afternoon as I wanted some homemade candy on my dessert table for a Christmas lunch. This is similar to other brittle recipes I've followed, but thought I'd use this one as KAF is such a trusted source. I followed the suggestions of others and did put the hot mixture out onto a parchment lined cookie sheet - I had no trouble taking the cooled brittle off it, later. My cooking time after adding the peanuts and butter was two minutes and fifteen seconds. This seems to be the optimum time for my super duper microwave. (I have also had success at totals of seven and seven and a half minutes but find this works best.) The recipe is also great with honey roasted peanuts and, of course, with cashews. In the winter I just cool my pan by placing it out in the cold garage for an hour. Voila, everything breaks up nicely. Such a great tasting candy, you won't be disappointed.
