I wanted to go "fancy" so I made it with cashews, unsweetened coconut, and macadamia pieces. After cooling but before breaking, I drizzled it with melted extra-dark chocolate. It turned out decadently delicious, and everyone is getting a bag of it in their stockings.
I have an idea for a different version. I want to try using boiled apple cider in place of half the corn syrup and use maple extract instead of vanilla. Then I'll add almonds, and...drumroll...crisp bacon pieces. After the holidays I'll have time for this experiment and will report my results. In the meantime I will read and appreciate any tips or cautions other cooks may have for me!
Most of all, thank you Julia for sharing your touching personal story. Both my parents were teachers, and it meant so much when former students came back and told them how their help and positive influence made a difference in their lives. This was a wonderful way to thank Mrs. B!
