I make a lot of Peanut Brittle but haven't tried it in the microwave. YET! I have 2 suggestions that I use when making mine the old fashioned way - combine the vanilla and baking soda in a small bowl - it will mix easier into the hot sugar mix and eliminate the possibility of getting a lump of soda in the brittle I heat the nuts (using raw ones, of course) in an oven so that when I add them the sugar temperature doesn't drop much at all. Usually I heat the oven to 350° and then turn it off and set the pan that the brittle will be poured onto in the oven with the nuts - I leave it until I am ready (soft ball stage) to add the nuts.
