I've been experimenting with brittles all year (even found a source for organic corn syrup) and this tried and true microwave method is such good news! I've never heard of it before. I'll be trying it today with my wasabi pea brittle. Spreading is much easier with a slightly preheated sheet pan. I preheat the oven to 200 F, then turn the oven off and put the buttered sheet pan in to warm it up.
