Very curious, Jacqueline! Usually, if a cookie softens up like that it's because a lot of moisture is trapped. If the cookies are at all warm that could release steam and soften them up. It may also work better to store them in something that isn't completely airtight, like a paper bag, and see if that allows them to maintain their texture for a longer period.
