Hi Lisa, I haven't tried making this recipe with raw cane sugar and I'm reluctant to suggest trying it because this process is so labor intensive. That would be too sad if you invested two hours in stirring (not to mention all the ingredients) and then the recipe didn't work properly! For best results I would recommend sticking to the granulated sugar. Barb
