Hi Kelly, the key to choosing a cooking pot is to look for one that's the right size (a 5- to 6-quart heavy-bottomed metal pot with tall, straight sides). The heavy bottom is really important. I ended up choosing this stainless steel pressure cooker because it has a thick, heavy bottom. However, this is a pricey pot and there's no need to invest a fortune in your pot. I'd look for a pot with similar dimensions that feels heavy and thick on the bottom, and you'll be good to go! This size is good for the recipe as written; if you decide to do a half batch you'll need a smaller sized pot (a 4-quart should work well for the reduced recipe). Barb
