I'm planning on making this for my father in law for Christmas, but I'm wondering if the cocoa powder is necessary? Could I eliminate that element without needing to adjust any other ingredients to make it more like a traditional spice cake type fruitcake? He hasn't had fruitcake in over 10 years since going gluten free so I'm excited to make this for him!
