Hi Erica, when using our Instant ClearJel (which is different that the clearjel used for canning) we recommend blending it with the sugar before mixing it in with the fruit. It's thickening power doesn't depend on heat, so it really doesn't matter when you add it in, but adding with the sugar will help prevent the Instant ClearJel from clumping.
