Every Fall our local produce stand sells mixed apples in 40 lb bags. I buy them and make apple pie filling to freeze. I always use a mix of apples (8 cups cut up), 1/2 cup sugar mixed with 2 tablespoons Instant Clear-Jel, and a little cinnamon. Into the microwave for 7 to 8 minutes -stirring at 4 minutes. So easy... then I let it cool and bag it up in a zip top bag and freeze. Since I use a mix of apples, some stay very firm and others soften nicely. Then, when the snow is blowing, I just pull out a pack of apple filling, let it defrost and fill my pie crust. Last Winter I used 10 packages. We like apple pie.
