Hi! I just made peach pie using just this idea. The lemon and sugar will keep the peaches from discoloring; and what discoloration does happen will be masked by the cinnamon (same goes for apple filling). Be aware the flour will want to drift to the bottom of the bowl as it sits; if you plan on baking the pie, make sure you stir the filling well before putting it in the pie shell. It's not necessary to bring the filling to room temperature before baking, unless you want to cook the filling on the stove to shorten the bake time (especially since you're planning to pre-bake the crust).
