Hi. I want to make a FRESH peach pie, one that is uncooked until it is baked in the oven. Can I make the simple filling ahead of time: peeled sliced peaches, lemon, flour, sugar, cinnamon and put it the fig until I have time to pour it into the pre-baked pie crust? Will the peaches turn color? Do I have to return the filling to room temperature before adding to the crust? I would really appreciate this make-ahead tip. The same question applies to uncooked apple filling....
